Cinnamon Coffee Bars Recipe

Ingredients:

1/4 cup shortening
1 cup brown sugar, firmly-packed
1/2 cup strong, good-quality hot coffee
1-1/2 cups all-purpose flour, sifted
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1-1/4 teaspoons cinnamon
1/2 cup raisins (use golden raisins for a milder flavor)
1/2 cup almonds or hazelnuts, chopped

Ingredients for Frosting:

1 cup powdered sugar, sifted
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 tablespoons milk

Directions:

Preheat oven to 350 degrees.

Grease a 9 x 13-inch baking pan.

In a large bowl, cream together shortening and brown sugar. Stir in coffee. In a separate bowl, sift together flour, baking powder, soda, salt and cinnamon. Stir into sugar mixture. Blend in raisins and nuts.

Spread into prepared pan. Bake in a 350-degree oven for 20 minutes. Cut into bars.

Frosting:

Blend together powdered sugar and salt. Mix in vanilla and milk. Spread frosting over cooled bars.

Servings: 12 - 15

Shrimp Gumbo Recipe

Ingredients:

2 pounds shrimp
2 tablespoons oil
2 tablespoons flour
3 cups okra, chopped, or 1 tablespoon filé
2 onions, chopped
2 tablespoons oil
1 can tomatoes
2 quarts water
1 bay leaf
1 teaspoon salt
3 gloves garlic (optional)
Red pepper (optional)

Directions:

Peel shrimp uncooked and devein. Make dark roux of flour and oil. Add shrimp to this for a few minutes, stirring constantly. Set aside. Smother okra and onions in oil. Add tomatoes when okra is nearly cooked. Then add water, bay leaf, garlic, salt, and pepper. Add shrimp and roux to this. Cover and cook slowly for 30 minutes.
If okra is not used, add gumbo filé after turning off heat.
Serve with rice.

Serves: 6 - 8

Tuna Casserole Recipe

Ingredients:

1 (9-1/4 ounce) can tuna, drained
1/2 cup chopped celery
1/2 cup chopped onion
1/3 cup chopped green pepper
2 eggs, boiled and chopped
4 ounces sharp Cheddar cheese, cut in pieces
1 (10-1/2 ounce) can mushroom soup
1-1/2 cups cooked rice
Black pepper to taste

Directions:

Mix all ingredients together in 1-1/2 quart casserole. Bake in 400 degree oven for 20 to 30 minutes or until cheese is melted and casserole is bubbling. This is good as a casserole, or hot dip in chafing dish, or cold as a spread on crackers, but always after being cooked. Can be made a day ahead.

Serves: 6
