Magic Cookie Bars

Ingredients

2 cups semi-sweet chocolate chips
1/2 cup butter or margarine
1 1/2 cups graham cracker crumbs
14 fluid ounces sweetened condensed milk (NOT evaporated milk)
1 1/3 cups flaked coconut
1 cup chopped nuts

Directions

Preheat oven to 350 degrees F (325 degrees F for glass dish). In 13 x 9-inch baking pan, melt butter in oven. Sprinkle crumbs over butter; pour sweetened condensed milk evenly over crumbs. Top with remaining ingredients; press down firmly with fork. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars. Store covered at room temperature.

Each 13×9-inch pan yields about 24 to 36 bars.

BROWNIE FUDGE COOKIES

Ingredients:

1 package fudge brownie mix
1 1/4 cup all purpose flour
1/4 cup packed brown sugar
2 eggs
1 stick butter, melted, cooled
3 tablespoons cold water
1 cup dark chocolate chips

Directions:

Whisk together flour, brownie mix and brown sugar. Stir in eggs one at a time, then butter and 2 tablespoons water.
(Batter will be very thick). Fold in chocolate chunks, cover and refrigerate for 2 hours. Preheat oven to 350 degrees. Grease a cookie sheet. Drop heaping tablespoons of dough on the cookie sheet, about 3 inches apart. Press down slightly but don’t flatten. Bake for 10 minutes at 350 degrees. Remove from oven and allow to cool 2 minutes before transferring to a cooling rack to cool completely.

Brown Sugar Chews Recipe

Ingredients:

1 egg white
1 cup brown sugar
1 Tablespoon flour
Pinch of salt
3/4 cup pecans, chopped

Directions:

Beat egg white until stiff froth; add brown sugar and continue beating.  Stir in flour and salt.  Fold in pecans.  Drop by small teaspoons on buttered cookie sheet and bake at 325 degrees for 10 minutes.
Partly cool before removing from cookie sheet.

Yield: 36 cookies

Biscotti Di Greve – Orange Almond Biscotti

Ingredients (48 servings)

2 cups unbleached, all-purpose flour
1 cup Sugar
1 teaspoon Baking soda
1/4 teaspoon
Salt
2 Eggs, large
1 Egg yolk, large
1 teaspoon Vanilla
1 tablespoon Orange zest;
freshly grated 1 1/2 cups Almonds, whole; toasted lightly & chopped coarse
Egg wash: 1 Egg, large; beaten with 1 teaspoonWater

Directions

In the bowl of an electric mixer, fitted with a paddle attachment, blend the flour, the sugar, the baking soda and the salt until the mixture is combined well. In a small bowl whisk together the whole eggs, the yolk, the vanilla and the zest, add the mixture to the flour mixture, beating until a dough is formed and stir in the almonds. Turn the dough out onto a lightly floured surface, knead it several times and halve it. Working on a large buttered and floured baking sheet, with floured hands form each piece of dough into a flattish log 12 inches long and 2 inches wide, arrange the logs at least 3 inches apart on the sheet, and brush them with the egg wash. Bake the logs in the middle of a preheated 300° for 50 minutes and them cool on the baking rack for 10 minutes. On a cutting board, cut the logs crosswise on the diagonal into 1/2 inch thick slices, arrange the biscotti, cut sides down, on the baking sheet and bake them, in the 300F oven for 15 minutes on each side. Transfer the biscotti to racks to cool and store them in airtight containers.

Fibber McGee Cookies

Ingredients:

1 cup butter
1-1/3 cups sugar
1-1/3 cups brown sugar
2 eggs
1 teaspoon vanilla
1-3/4 cups flour
1 teaspoon soda
3-1/2 cups quick-cooking oats
1-1/2 cups salted peanuts or pecans
1 package (6 ounces) chocolate chips

Directions:

Cream together butter and sugars. Beat in eggs. Stir in vanilla. Add flour and soda. Stir in oats, nuts and chocolate chips. Drop onto ungreased cookie sheet by teaspoonfuls. Bake as directed.

Temperature:  350 degrees
Time:  12 minutes

Yield: 5 dozen
